Here is a recipe I like to cook for cold, winter days:
Ingredients (serves 2):
1/2 red onion (warm in temperature, it expels cold and warms the stomach)
2 cups shiitake mushrooms (neutral and sweet, it is good to boost the qi of stomach and spleen)
1 cup black beans (warm, benefits the kidneys)
Black sesame seeds (tonifies the liver and kidneys)
salt
If you are a vegetarian, you can use ghee. If you have a plant based diet, you can use olive oil with a little bit sesame oil to cook the onions till they are caramelized. Then add the shiitake mushroom with 1 teaspoon salt and black sesame seeds.
After the shiitake mushroom is cooked well enough, you can add the black beans (whether you cook them ahead of time or use a can) till everything blends in and warm it up.
It is a very simple yet nourishing and tasty dish.
